<p>500g Chickpeas (very soft either from a jar or freshly cooked &#8211; not tinned!)<br />
2 tbsp of tahini<br />
Juice of 1 large lemon<br />
1 Clove of Garlic<br />
1 tsp Turmeric<br />
1 tsp Cumin<br />
2 birds eye chillis<br />
Salt and pepper<br />
¼ Cup Cold Water</p>
<h6>Garnish</h6>
<p>½ cup chopped flat parsley<br />
¼ cup chopped walnuts<br />
Olive oil to drizzle</p>

			<h4>Method</h4>
<p>Add all the main ingredients (not the garnish) into a food processor that’s the right size and pulse till very well blended. Season with salt and pepper. Add cold water to soften if needed, and add extra lemon and chilli to taste. Transfer to a mezze bowl and garnish with parsley, walnuts and drizzle with extra virgin olive oil.</p>

			<h4>Method</h4>
<p>Mix all the ingredients in a large bowl really well with your hands till everything is really well incorporated. You can use a food processor as well but it&#8217;s better with your hands!</p>
<p>Make them into 5cm sausage shapes with square edges, and refrigerate for 30 minutes till firm.</p>
<p>Heat up a frying pan to a medium heat with olive oil or ghee and fry the Kofta till cooked and nicely golden.</p>
<p>Serve immediately with Buckwheat Flat Bread.</p>
